Carrot And Cracker Casserole - cooking recipe

Ingredients
    3 c. sliced carrots
    2 Tbsp. melted butter
    1/4 c. minced yellow onion
    18 soda crackers, crumbled
    1/2 c. shredded Cheddar cheese
Preparation
    Cook carrots in boiling water in saucepan until tender. Drain, reserving 2/3 cup cooking liquid.
    Mash carrots with reserved liquid.
    Add butter, onion and cracker crumbs; stir well. Spoon into 8 x 8-inch baking dish.
    Sprinkle with cheese.
    Bake at 450\u00b0 for 15 minutes.
