Swiss Steak - cooking recipe
Ingredients

3 Tbsp. all-purpose flour
2 lb. steak or venison
1/2 c. butter or margarine
1 medium onion
1 small green pepper
1 (16 oz.) can peeled tomatoes
2 c. beef bouillon
1 Tbsp. salt
Preparation

Using mallet, pound flour into both sides of steak.
Saute steak in butter in large skillet over high heat.
Quickly brown both sides.
Place steak in large pot.
Arrange vegetables on steak.
Add skillet drippings, consomme and seasonings.
Simmer, tightly covered, for about 1 1/2 hours or until meat is tender. Serve over rice or broad noodles.
Yields 4 servings.
