Tofu Pie - cooking recipe

Ingredients
    1 block soft tofu, drained
    1 (6 oz.) box lemon jello
    2 c. boiling water
    2 Tbsp. lemon juice
    1 to 2 Tbsp. lemon extract
    2 (8 oz.) containers Cool Whip
    3 graham or butter pie shells
Preparation
    Drain tofu; mash and mix in a small bowl and set aside.
    In a larger bowl, mix together jello, lemon juice and lemon extract. Add tofu and blend well.
    Chill until slightly gelled and fold in 8 ounces Cool Whip.
    Pour into pie shells and chill well.
    Using the other 8 ounces of Cool Whip, top the tofu pies.
