Shanghai Beef - cooking recipe
Ingredients

1 lb. round steak, cut into thin strips
2 Tbsp. cornstarch
1 1/2 c. beef broth
8 oz. can sliced water chestnuts, drained
1 medium red pepper, chopped
5 scallions, cut diagonally into 1-inch pieces
3 Tbsp. soy sauce
1/4 tsp. pepper
1 1/2 c. dry Minute rice
Preparation

Place steak strips, scallions and broth into 2 1/2 quart microwave-safe dish.
Cook 3 minutes, stir in cornstarch.
Blend well.
Add remaining ingredients to meat mixture.
Cover and cook 10 minutes or until thickened.
Stir twice and fluff with fork.
