Seafood Gumbo - cooking recipe

Ingredients
    1/2 c. oil
    1/2 c. flour
    4 blue crabs
    2 lb. shrimp
    1 onion, chopped
    3 stalks celery, chopped
    2 lb. okra, fried
    1 lb. can whole tomatoes
    1 clove garlic
    2 Tbsp. thyme
    1 bunch green onions
Preparation
    Peel shrimp.
    Put shrimp peels, onion skins and tops in a stock pot.
    Cover with water and boil for 20 minutes.
    Strain and reserve broth.
    Make a dark roux with the flour and oil.
    Add onion and allow to caramelize.
    Add celery and bell pepper.
    Saute for 5 minutes, then add the crabs, tomatoes, herbs, okra and the shrimp broth.
    Add garlic salt and pepper to taste.
    Simmer 45 minutes or longer.
    Ten minutes before serving, add shrimp and green onions.
    Serve over cooked rice.
