Carrot Cake - cooking recipe

3 eggs
2 c. sugar
1 1/4 c. vegetable oil
2 tsp. vanilla
2 1/4 c. flour
2 tsp. cinnamon
1/4 tsp. nutmeg
1/4 tsp. allspice
2 tsp. baking soda
1 tsp. salt
2 c. carrots, grated
2 c. coconut
8 oz. can pineapple
1 c. pecan pieces, crushed
1 c. raisins
Preparation

Mix sugar, oil, eggs and vanilla together well. Mix flour, cinnamon, nutmeg, allspice, baking soda, salt, carrots and raisins together. Add sugar mixture to flour mixture. Bake in 13 x 9-inch pan at 350\u00b0 until lightly brown, about 40 to 45 minutes. Cover with a cream cheese icing and crushed pecans.
