Sweet Potato Balls - cooking recipe

Ingredients
    3 c. cooked sweet potatoes
    1/4 c. butter
    3/4 c. brown sugar
    2 Tbsp. milk
    1/4 tsp. salt
    1/2 tsp. grated lemon rind
    8 marshmallows
    1/2 c. crushed cornflakes
Preparation
    Mash potatoes, add butter, sugar, milk, salt and lemon rind; blend well.
    Scoop some and put a marshmallow into it.
    Shape into a ball.
    Roll in crushed cornflakes.
    Place in a buttered baking dish and bake 20 minutes at 375\u00b0.
    Serves 4.
