Peanut Sauce With Grilled Chicken - cooking recipe

Ingredients
    1 1/2-inch piece ginger root, peeled and minced
    1/2 head garlic, peeled and crushed
    2 lb. creamy peanut butter
    1/2 c. chicken stock
    1/4 c. light soy sauce
    2 Tbsp. chili oil
    lime juice to taste
    1/4 c. honey
    1/4 c. chopped cilantro leaves
    salt and pepper to taste
Preparation
    Combine all ingredients in mixing bowl; mix well.
    Season to taste.
    Store in a sealed container until ready to use.
    Keeps for several weeks in refrigerator.
    Makes 2 quarts.
