Cajun Red Beans And Rice - cooking recipe

Ingredients
    1 lb. dried red beans
    1/2 lb. salt pork
    3 c. chopped onion
    1 c. chopped green onion
    1 c. chopped parsley
    1 Tbsp. garlic salt
    1/2 tsp. dried whole oregano
    1 tsp. red pepper
    1 Tbsp. Worcestershire sauce
    1 tsp. pepper
    1 1/2 tsp. hot sauce
    1 (8 oz.) can tomato sauce
    1 lb. smoked sausage, cut in 1/4-inch slices
    hot cooked rice
Preparation
    Sort and wash beans; place in a large Dutch oven.
    Cover with water 2-inches above beans.
    Let soak overnight.
    Add salt pork to beans; cover and simmer 45 minutes.
    Stir in onion, green onions, parsley, garlic salt, oregano, red pepper, hot sauce and tomato sauce; continue to cook 1 hour.
    Brown sausage and drain; add to bean mixture.
    Cover and simmer 45 minutes, adding more water, if necessary.
    Serve over rice.
    Yields 6 to 8 servings.
