Red Beans And Rice Creole Style - cooking recipe

Ingredients
    1 c. western dry red beans
    4 c. water
    1 lb. hot Italian sausage, cut into 1/2-inch slices
    1/2 c. chopped onions
    1 clove garlic, minced
    1 tsp. salt
    1/2 tsp. marjoram
    1 bay leaf
    red and black pepper to taste
    1 (28 oz.) can peeled tomatoes
    1 c. uncooked rice
    1/2 c. coarsely chopped celery
    1 green bell pepper, coarsely chopped
Preparation
    Wash beans. Soak beans in water overnight.
    Brown sausage in large saucepan or Dutch oven.
    Pour off all but 1 tablespoon fat. Add onions and garlic to pan and cook until tender.
    Add beans and soaking liquid, salt, marjoram, bay leaf and pepper.
    Cover and simmer 1 1/2 hours or until beans are almost tender.
