Ingredients

2 c. beets, cooked tender, skinned and diced (juice reserved)
1/4 c. sugar
1 Tbsp. cornstarch
1/4 tsp. salt
1/2 c. orange juice
1 Tbsp. butter
Preparation

Mix cornstarch, sugar and salt.
Add beet juice and orange juice.
Cook until thickens.
Add beets and butter.
Cook 10 minutes.
Makes 4 servings.
