Light Beer Stew - cooking recipe

Ingredients
    1 lb. stew meat
    vegetable cooking spray
    1 tsp. vegetable oil
    1 c. chopped onion
    1 (12 oz.) can light beer
    2 bay leaves
    1/2 tsp. dried whole thyme
    1/2 tsp. ground pepper
    1/4 tsp. salt
    5 medium carrots, sliced
    1/2 lb. mushrooms, sliced
    2 tsp. cornstarch
    2 Tbsp. water
Preparation
    Cut meat into cubes.
    Coat heavy pan with cooking spray; add oil.
    Place over medium-high heat.
    When oil is hot, add meat; cook until well browned, turning to cook on all sides.
    Reduce heat to medium-low; add onion and cook until onion is tender and lightly browned.
    Stir in beer, spices, carrots and mushrooms; bring to a boil.
    Cover; reduce heat and simmer 1 to 1 1/2 hours. Combine cornstarch and water; stir until blended.
    Stir into meat mixture.
    Cook uncovered 10 minutes, stirring occasionally. Remove bay leaves before serving.
    Serves 4.
