Vermicelli Soup - cooking recipe

Ingredients
    2 garlic cloves, peeled
    1/2 bunch green onions, white part only
    1 Tbsp. vegetable oil
    2 1/2 oz. vermicelli, broken
    3 c. chicken stock, defatted
    1 1/2 green chiles, whole (canned)
    1 Tbsp. pimiento
Preparation
    Chop garlic and onion.
    Heat the oil in a 2-quart saucepan and lightly brown vermicelli.
    Watch carefully and stir constantly to prevent burning.
    Add garlic and onion.
    Saute for several minutes.
    Add tomatoes, stock, chiles and pimiento.
    Simmer about 8 minutes or until most of the liquid is absorbed.
    Serve hot. Makes 10 (1/2 cup) servings.
