Eggplant Casserole - cooking recipe

Ingredients
    1 eggplant, peeled and diced
    1 green pepper, chopped
    1 small onion, chopped
    1/3 c. uncooked soy grits
    2 c. stewed or canned tomatoes
    season to taste
Preparation
    Place a layer of diced eggplant in casserole.
    Top with layer of green pepper and onion.
    Sprinkle on the soy grits.
    Top with rest of eggplant, pepper and onion.
    Add tomatoes.
    Cover and bake 40 minutes in a moderate oven.
    Serves 4 to 6.
