Apple Muffins - cooking recipe
Ingredients

1 1/2 c. firmly packed brown sugar
2/3 c. vegetable oil
1 egg
1 c. buttermilk
1 tsp. baking soda
1 tsp. salt
1 tsp. vanilla
1 1/2 c. diced apples
1/2 c. chopped pecans
2 1/2 c. flour
1/3 c. sugar
1 tsp. melted butter
Preparation

Combine the first 3 ingredients.
In another bowl, combine buttermilk, soda, salt and vanilla; add to the sugar mixture alternately with flour, mixing after each addition.
Fold in the apples and pecans.
Pour into muffin papers in muffin pan. Combine sugar and melted butter; sprinkle on top of each muffin. Bake at 325\u00b0 for 30 minutes, or until cake tester comes out clean. Yields about 15 muffins.
