Vegetarian Chili - cooking recipe

Ingredients
    1 white onion, diced
    3 eggplants, cubed
    4 carrots, diced
    1 lb. broccoli flowerets
    2 c. cauliflower
    3 c. mushrooms
    2 Tbsp. chili powder
    2 Tbsp. cumin
    1/2 tsp. black pepper
    1 Tbsp. fennel seed
    1/2 c. garlic, minced
    1 can diced tomatoes in juice
    1/2 tsp. red chilis
    1/2 c. olive oil
    1/2 gal. water
Preparation
    Saute onions, garlic, mushrooms and carrots in olive oil.
    Add the tomato, water and spices; bring to a boil.
    Reduce heat to a simmer and add the rest of the ingredients.
    Simmer for about 20 to 30 minutes.
