Vidalia Onion Casserole - cooking recipe
Ingredients

1/2 c. butter or margarine
4 medium Vidalia onions sliced
12 saltine crackers, crushed
1 (10 3/4 oz.) can condensed cream of mushroom soup
6-8 oz. Cheddar cheese, grated plus, extra for topping
Salt and pepper to taste
2 eggs
1/2 to 1 c. milk
Preparation

Preheat oven to 350\u00b0.
Melt butter in a large skillet.
Add onions and cook 12 to 15 minutes or until tender and transparent. Saving some for topping. Sprinkle cracker crumbs in a greased 9x13 inch casserole dish to line bottom and sides.
Layer cooked onions, soup and cheese in dish.
Lightly season onion layer with salt. Beat together eggs, milk, salt and pepper
and pour over layers.
Sprinkle with reserved crumbs and extra cheese.
Bake 30 to 45 minutes or until browned and bubbly.
Serves 6-8.
