White Chili - cooking recipe
Ingredients

1 lb. dried white beans
2 small-medium onions, chopped
1 red pepper
2 cloves garlic
2 Tbsp. oil (preferably corn or peanut oil)
2 tsp. each: ground cumin, dried oregano, ground coriander
pinch of each: ground cloves, cayenne pepper, white pepper (add more cayenne and white pepper to make hotter)
4 boneless, skinless chicken breasts, diced (substitute some thigh meat for a bit more flavor)
1/2 c. grated Monterey Jack cheese
4 green onions, thinly sliced
Preparation

Combine beans, stock, 1/2 the onion, garlic and salt in a large kettle and bring to a boil.
Reduce heat, cover and simmer 2 hours or until beans are tender.
Remove from heat and store in refrigerator overnight.
