Lentil-Spinach Soup - cooking recipe

Ingredients
    8 c. chicken stock or 48 oz. can stock
    2 cloves chopped garlic
    1 onion, chopped
    3/4 c. chopped carrots
    1 c. chopped celery
    1 c. lentils
    1 bunch spinach
    3 Tbsp. lemon juice or vinegar
    salt and pepper to taste
Preparation
    Wash and pick over lentils.
    Place in boiling water and cook 2 minutes.
    Cover; let sit 1 hour and drain.
    (This removes gas.)
