Bean Soup(Fassoulatha) - cooking recipe

Ingredients
    1 lb. navy beans
    2 qt. water (more if needed)
    2 small onions, chopped
    2 medium carrots, diced
    3 stalks celery, chopped (including leaves)
    1 1/2 c. canned tomatoes, crushed
    1 garlic clove, crushed
    1/2 c. olive oil
    1/2 can tomato paste
    1 Tbsp. sugar
    1 Tbsp. parsley, chopped
    salt and pepper to taste
Preparation
    Soak beans for 3 hours and drain.
    Saute onions, garlic, carrots and celery in olive oil.
    Add all ingredients to beans and water; cover and cook on low until beans are soft (about 3 hours). Serves 6 to 8.
