Nigerian Chicken - cooking recipe

Ingredients
    1 whole chicken
    1 (16 oz.) can tomatoes
    1 1/4 c. chicken broth
    1 medium onion, chopped
    1/4 tsp. red pepper
    1 bay leaf
    1/2 tsp. ginger (ground)
    rice
Preparation
    Boil chicken until done.
    Save broth.
    Debone chicken.
    In a casserole dish, combine chicken, bay leaf, ginger, onion, red pepper, tomatoes and broth.
    Cover and cook in a 350\u00b0 oven until bubbly.
    Serve over rice.
    Serves 6.
