Ingredients

1 c. quick oatmeal
1 c. buttermilk
1 egg
1/4 c. flour
1/4 c. wheat flour or corn meal (can omit)
1 Tbsp. vegetable oil
1/4 tsp. salt
1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. cinnamon
1 Tbsp. sugar
Preparation

Mix oatmeal and buttermilk in a small covered bowl. Refrigerate overnight.
Add beaten egg and sifted dry ingredients in morning.
Mix all.
Add vegetable oil and more liquid if needed.
Bake on lightly greased griddle.
Makes about 12 pancakes.
