Smothered Okra - cooking recipe

Ingredients
    2 lb. okra (about 1 pt.), chopped
    3 Tbsp. oil
    1 large onion, finely chopped
    2 to 3 Tbsp. vinegar
    salt and pepper to taste
Preparation
    Put oil in a big aluminum pot (approximately 2 quarts).
    Saute onions.
    Add okra, salt and pepper.
    Smother okra down until it is slimy.
    Add the vinegar, 1 tablespoon at a time.
    Vinegar will disappear as it cooks.
    Cook 45 minutes to 1 hour.
