Banana-Nut Roll - cooking recipe

Ingredients
    1/2 c. butter or margarine, softened
    2 c. sugar
    2 eggs
    2 c. flour
    1 1/2 tsp. baking soda
    1/4 tsp. salt
    1/4 c. plus 2 Tbsp. buttermilk
    1 1/2 c. mashed ripe banana (about 3 medium)
    1 c. chopped pecans
    1 tsp. vanilla
Preparation
    Cream butter
    and sugar, beating well at medium speed of an electric mixer.
    Add eggs,
    1
    at
    a
    time,
    beating
    well. Combine flour, soda and salt; add to creamed mixture alternately with buttermilk, beginning
    and
    ending
    with flour mixture. Stir in banana, pecans and
    vanilla.
    Spoon
    batter
    into
    3 (1 pound) greased and floured coffee
    cans.
    Bake
    at
    350\u00b0 for 55 minutes or until a wooden
    pick
    inserted
    in
    center comes out clean. Cool in cans 10
    minutes;
    remove to wire rack and cool completely.
    Yields 3 loaves.
