Allison'S Lemon-Zucchini Bread - cooking recipe

Ingredients
    4 small zucchini (1 lb.)
    2 Tbsp. lemon peel
    1/4 c. lemon juice (fresh)
    3 c. all-purpose flour
    1 Tbsp. baking powder
    1 c. walnut pieces
    1 c. salad oil
    2 c. sugar
    3 eggs
    Pam or nonstick spray
Preparation
    Preheat oven to 350\u00b0.
    Spray 2 loaf pans, 5 x 9-inch, with nonstick spray.
    Rinse and grate zucchini.
    Do not peel.
    Place flour, baking powder and walnuts in medium bowl.
    Blend and set aside.
    Place oil, sugar, lemon peel and lemon juice in large bowl.
    Beat with electric mixer until blended.
    Add eggs, one at a time, and beat after each addition until well mixed.
    Add flour mixture to egg mixture.
    Blend.
    Add shredded zucchini and mix well.
    Pour batter into 2 loaf pans.
    Bake 50 minutes.
