Lemon Butter Baked Fish - cooking recipe

Ingredients
    1 lb. catfish fillets
    1/2 to 1 tsp. salt
    1/8 tsp. pepper
    1/2 c. (1/4 lb.) butter
    1/2 c. chopped parsley
    1 Tbsp. lemon juice
    1/2 tsp. paprika
Preparation
    In a 12 x 8 x 2-inch dish, arrange fillets with thickest, meaty areas to outside edge of dish. Sprinkle with salt and pepper. In 1-quart casserole dish, place butter. Microwave on High for 1 to 2 minutes until melted. Blend in parsley and lemon juice; pour over fish. Sprinkle paprika over fillets. Preheat oven to 350\u00b0. Place casserole dish in oven. Cook 45 to 60 minutes or until fillets are fluffy. Serves 2 to 3 people.
