Easy Garlic Chicken - cooking recipe

Ingredients
    1 whole roasting chicken (about 3 lb.)
    salt and pepper to taste
    12 cloves garlic, peeled
    1 medium onion, quartered
    1/2 c. fresh parsley, snipped
    1 tsp. dried thyme
    1 bay leaf (optional)
    2 Tbsp. tarragon vinegar
    1/2 c. apple juice
Preparation
    Wash chicken and pat dry.
    Rub with salt and pepper.
    Cut one clove of garlic in half and rub over chicken.
    Place remaining garlic, onion quarters, parsley and thyme in chicken cavity. Place in roasting pan.
    Place vinegar and apple juice in pan with chicken, using liquid for basting.
    Roast at 425\u00b0 for 20 minutes. Baste once with juices.
    Reduce oven to 350\u00b0 and roast at least 1 more hour, basting often.
