Donna'S Mad Hatter Cheese Cake - cooking recipe
Ingredients

1 c. fine graham cracker crumbs
1/2 c. fine chopped pecans
3/4 tsp. cinnamon
1/2 c. melted butter
1 lb. cream cheese
3 eggs, beaten and at room temperature
1 c. sugar
1/4 tsp. salt
1 1/2 Tbsp. lemon juice
1/2 tsp. almond extract
scraping of 1 vanilla bean
1 Tbsp. grated lemon rind
3 c. sour cream
Preparation

Have cheese, eggs and butter at room temperature.
In bowl, whip cream cheese until light (2 minutes).
Add butter, eggs, sugar, salt and flavorings.
Beat until smooth.
Fold in sour cream.
Pour in prepared pan and sprinkle with reserved crumbs. Bake at 350\u00b0 about 45 minutes, or until formed.
Turn off oven and let cake stand in oven for 30 minutes.
Cool and top as desired.
