Basil Vegetables - cooking recipe
Ingredients

1/4 c. chopped onion (1 small)
2 large cloves garlic, finely chopped
1 Tbsp. olive or vegetable oil
2 c. chopped seeded tomatoes (2 medium)
1 1/2 c. thinly sliced zucchini (1 1/2 small)
1/4 c. snipped basil leaves or 1 Tbsp. dried
1/4 c. grated Parmesan cheese
Preparation

Cook and stir onion and garlic in oil in 10-inch nonstick skillet over medium-high heat until onion is tender, about 2 minutes.
Stir in tomatoes, zucchini and basil.
Heat to boiling; reduce heat.
Simmer uncovered until zucchini is crisp and tender, about 3 minutes longer.
Stir in cheese.
