Harvard Beet Cake("Beet Haters Love This Recipe") - cooking recipe
Ingredients

1 c. oil
1 stick butter, melted
3 eggs
2 c. sugar
2 1/2 c. all-purpose flour
2 tsp. baking soda
2 tsp. cinnamon
2 tsp. salt
2 tsp. vanilla
1 c. crushed beets and juice
1 c. pineapple, drained
1 c. coarsely chopped walnuts
1/2 c. creamed cottage cheese
1/2 c. shredded coconut
Preparation

In a large bowl, mix oil, butter, eggs and sugar.
Beat thoroughly.
Mix all dry ingredients very well in a separate bowl or sift ingredients.
Combine all ingredients, including remaining ingredients, in the large bowl and mix well.
