Squash Relish(Yields 6 Pints) - cooking recipe

Ingredients
    10 c. squash
    4 c. onions
    1 c. bell peppers
    5 Tbsp. salt
    2 1/2 c. white vinegar
    4 c. sugar
    1 Tbsp. black pepper
    1 Tbsp. celery seed
    1 Tbsp. turmeric
    1 (4 oz.) jar pimentos
Preparation
    Coarsely grind squash, onions and bell peppers; add salt.
    Let set overnight.
    Next morning, drain.
    Wash in cold water, using a fine wire colander.
    Squeeze out excess liquid.
    Mix together the rest of the ingredients; bring to boil.
    Add relish mixture; let return to boil and boil about 2 minutes.
    Put in jars and seal.
