Fried Eggplant - cooking recipe

Ingredients
    1 large eggplant, peeled
    3/4 c. oil
    salt and pepper
    1/4 c. grated Parmesan cheese
    chopped parsley
Preparation
    Cut eggplant in 1/2-inch crosswise slices.
    Saute in oil until brown on both sides and soft.
    Season with salt and pepper. Arrange eggplant on platter.
    Sprinkle with Parmesan cheese and parsley.
    Makes 4 servings.
