Potato Candy - cooking recipe

Ingredients
    1 medium size potato
    powdered sugar
    1 tsp. vanilla flavoring
    peanut butter
Preparation
    Peel potato.
    Cook in small amount of water.
    When tender, smash or beat until smooth.
    Add powdered sugar and 1 teaspoon vanilla.
    Work in until able to roll out on powdered area to thickness of 1/4-inch to 1/3-inch.
    Spread enough peanut butter to cover area.
    Roll like jellyroll, starting with long area.
    Roll may be cut into 2 or 3 pieces.
    Roll in bar in wax paper. Refrigerate.
    Slice when ready to eat.
    Put back in refrigerator.
