Oven Fried Chicken (Potato Flakes) - cooking recipe
Ingredients

1 c. potato flakes
1 tsp. salt
1/4 tsp. pepper
1/4 tsp. crushed rosemary
1/4 to 1/2 tsp. poultry seasoning
1 egg, slightly beaten
1 tsp. lemon juice
2 1/2 to 3 lb. frying chicken, cut up
Preparation

In a plastic bag combine potato flakes and seasonings.
In shallow bowl combine egg and lemon juice.
Dip chicken pieces in egg mixture.
Shake in plastic bag.
Place chicken, skin side up, in ungreased 15 x 10-inch jellyroll pan.
Bake uncovered for 60 to 75 minutes or until chicken is tender.
Gives 6 servings.
