Mexican Meat Loaf - cooking recipe

Ingredients
    2 eggs, beaten
    1/2 c. taco sauce
    2 or 3 jalapeno peppers, minced
    1/3 c. wheat bread crumbs
    1 tsp. salt
    1/4 c. chopped onion
    1 1/2 lb. lean ground beef
    1/4 c. taco sauce
    1/3 c. shredded Monterey Jack cheese
Preparation
    Combine first 6 ingredients in large bowl; stir until blended. Add ground beef and mix well.
    Pack in 9 x 5-inch loaf pan and spread taco sauce on top.
    Bake, uncovered, at 325\u00b0 for 1 hour. Sprinkle cheese on top of meat loaf and bake an additional 5 minutes or until cheese melts.
    Makes 6 to 8 servings.
