Tart Beet Salad - cooking recipe

Ingredients
    1 can shoestring beets
    1 c. chopped celery
    1 green onion, chopped (tops and bottoms)
    1 (3 oz.) pkg. lemon jello
    1 tsp. mustard
    1 tsp. horseradish
    1/2 tsp. salt
Preparation
    Dissolve lemon jello in 1 cup boiling water, then add 1 cup beet juice or cold water.
    Add beets, celery, onion, horseradish and mustard; stir.
    Pour into individual molds or 8 x 8-inch dish. Delicious with bland meat dishes or cheese strata.
    Serves 8.
