Chicken Soup - cooking recipe

Ingredients
    1 large chicken (preferably a 4 to 5 lb. fowl)
    3 qt. cold water
    1 Tbsp. kosher salt
    1/4 tsp. pepper
    3 to 4 sprigs fresh parsley
    2 sprigs fresh dill
    2 carrots, sliced into rounds
    2 stalks celery with leaves
Preparation
    Place chicken in large stewing pot; add water.
    Bring to boil; lower burner.
    Simmer gently, uncovered, for 3 hours.
    Add other ingredients just before lowering burner.
    Allow pot to cool.
    Chill soup.
    Remove fat and strain soup.
    Reserve small amount fat and return to soup as you reheat for serving.
    Cut chicken into small pieces.
    Serves 8.
