Ingredients

3 c. heavy cream
1 c. sugar
1 vanilla bean, split and scraped
6 lg. egg yolks, chilled
Preparation

Preheat oven to 300\u00b0.
Adjust the rack to the center of the oven.
Place six 6-oz. ramekins in a larger baking pan, making sure the larger pan is at least 1/2 inch deeper than the ramekins. Bring the cream, 1/2 c. sugar, and the vanilla bean and scraped seeds to a simmer in a large saucepan over medium heat.
Remove from the heat, cover the pan with plastic film and let steep for 15 minutes.
