Zucchini And Pepper Enchiladas - cooking recipe
Ingredients

2 Tbsp. olive oil
2 medium cloves garlic, diced
1 c. minced onion
1/2 tsp. salt
1 c. minced green bell pepper
2 1/2 c. diced zucchini
1/2 tsp. cumin
1/2 tsp. oregano
1/2 tsp. basil
1/2 tsp. cayenne
black pepper to taste
1 c. (packed) grated sharp Cheddar cheese
Preparation

In a large heavy skillet, saute the garlic and onion in olive oil with salt.
When the onions are soft, add the peppers, zucchini and herbs.
Stir and cook on medium heat for 5 to 8 minutes.
Remove from heat and stir in the cheese.
Cool to room temperature before filling enchiladas.
Prepare red enchilada sauce (next recipe).
