Green Beans In Olive Oil (Lubiyeh Bi-Zaut) - cooking recipe
Ingredients

1 lb. fresh green beans
2 medium onions
1/3 c. olive oil
4 medium tomatoes, skinned
4 cloves garlic
1 1/2 tsp. salt
1/2 tsp. allspice or bhar
1 tsp. tomato paste diluted in little water
Preparation

Wash beans in cold water, cut off ends and cut in half.
Chop onions and garlic and saute them in oil until golden.
Add beans, salt and allspice and toss lightly.
Cover and cook for 10 minutes over low heat; add tomato paste.
Slice tomatoes and fold in; simmer for 15 to 20 minutes until it thickens.
Can be served cold or hot.
Serves 4.
