Potato Latkes - cooking recipe
Ingredients

5 Idaho potatoes, peeled and cubed
1 carrot, cut in cubes
1 onion, cut in cubes
2 Tbsp. matzah meal
2 eggs
garlic powder
salt and pepper
1/2 c. oil
Preparation

Break one egg into blender. Add 2 1/2 potatoes, 1/2 onion and 1/2 carrot in blender. Put blender on grate. Pour mixture into a bowl.
Repeat with remaining 1 egg, 2 1/2 potatoes, 1/2 onion and 1/2 carrot.
Grate in blender. Pour into bowl. Add in matzah meal. Sprinkle in garlic powder, salt and pepper.
Mix thoroughly. Heat oil in frying pan.
When hot, drop in tablespoons of latke mix. Fry on both sides until golden brown. Put them on paper towels to absorb the extra oil. Enjoy the delicious snack.
