Chicken Stir-Fry - cooking recipe

Ingredients
    1 c. chicken broth
    1 Tbsp. cornstarch
    1/2 tsp. ground ginger
    1/4 tsp. crushed red pepper
    2 Tbsp. oil, divided
    4 c. cut up vegetables
    2 cloves garlic, minced
    3/4 lb. boneless, skinless chicken breast, thinly sliced
Preparation
    In a bowl, mix the first 4 ingredients; set aside.
    In skillet, heat 1 tablespoon oil over medium-high heat.
    Add vegetables and garlic; stir-fry for 3 minutes, or until tender-crisp.
    Remove. Heat remaining 1 tablespoon oil.
    Add chicken; stir-fry 4 minutes. Return vegetables.
    Stir broth mixture.
    Add to skillet, stirring constantly.
    Bring to boil; boil 1 minute.
    Serves 4.
