Canadian Cheese Soup - cooking recipe
Ingredients

3 Tbsp. grated, pared carrot
3 Tbsp. butter
3 Tbsp. grated onion
4 c. chicken broth
1/2 tsp. dry mustard
1/2 Tbsp. paprika
2 Tbsp. cornstarch
1/4 c. milk
1/4 lb. (1 c.) Cheddar cheese, grated (you decide, mild, medium or old)
1 c. beer
chopped fresh parsley
Preparation

Saute carrot and onion in butter until soft.
Add chicken broth, mustard and paprika.
Continue to cook over low heat for about 15 minutes.
Mix cornstarch with milk and add to soup. Remove from heat and cool for about 5 minutes.
Add cheese and beer and return to heat.
Stir over low heat until cheese melts.
Serve with a sprinkling of parsley.
Makes 6 servings.
