Chicken Prima Vera - cooking recipe

Ingredients
    1 Tbsp. oil
    3/4 lb. boneless, skinless chicken breast
    1 c. broccoli flowerets
    1 c. thawed frozen green peas
    1 carrot, cut in strips
    1 small onion
    1 can chicken broth
    1/2 tsp. dried basil leaves
    dash of pepper
    1 1/2 c. Minute brown rice (uncooked)
    1/4 c. grated Parmesan cheese
Preparation
    Heat oil in large skillet.
    Add chicken.
    Cook and stir until browned.
    Add broccoli, peas, carrot and onion; cook and stir until vegetables are tender-crisp.
    Stir in broth, basil and pepper.
    Bring to a boil.
    Stir in rice.
    Return to boil.
    Reduce heat to low; cover and simmer 5 minutes.
    Remove from heat.
    Let stand 5 minutes.
    Stir in cheese.
    Makes 4 servings.
    Can be doubled.
