Fresh Corn Bell Pepper Relish - cooking recipe

Ingredients
    1 1/2 c. corn, cut from cob (about 3 ears)
    1/2 c. diced green bell pepper
    1/2 c. diced red bell pepper
    1/4 c. minced onion
    1/4 c. rice vinegar
    1/4 tsp. pepper
    1/4 tsp. salt
Preparation
    Combine all ingredients in a bowl; stir well.
    Cover and chill 2 hours.
    Serve
    with pork or beef.
    Store in an airtight container in refrigerator up
    to
    12
    days.
    Yields
    2 1/2 cups (about 6 calories per tablespoon).
