Black Bean Chili With Rice - cooking recipe
Ingredients

1 Tbsp. oil
1/2 c. chopped green pepper
1/2 c. chopped onion
1 clove garlic, minced
1 can black beans, drained
1/2 lb. cooked ham, chopped
1/2 tsp. dried oregano
1/8 tsp. cayenne
1 can whole tomatoes, undrained
1 bay leaf
2 c. cooked rice
Preparation

Heat oil in large skillet over medium-high heat.
Add green pepper, garlic and onion.
Cook and stir until crisp and tender. Stir in beans, tomatoes, ham, oregano, ground cayenne and bay leaf.
Simmer 10 minutes.
Remove bay leaf.
Serve bean mixture over rice.
Serves 4.
