Pate With Pistachios - cooking recipe

Ingredients
    1-lb. lean pork, cut in 1 inch cubes
    3/4-lb. lean veal, cut in 1 inch cubes
    1/2-lb. cooked ham (one slab), cut in 1/2 inch cubes
    1 Tbsp. butter
    1/2 c. shallots, coarsely chopped
    1/4 tsp. thyme
    1/2 bay leaf, crumbled
    1/2 c. shelled, toasted pistachios
    1/8 tsp. allspice
    1/8 tsp. ground cloves
    1/4 tsp. grated nutmeg
    pinch cinnamon
    pinch cayenne pepper
    1/2 c. dry white wine
    salt and pepper to taste
    3 slices lean bacon
Preparation
    Preheat oven to 425.
    Cut pork and veal into 1 inch cubes. Cut ham into 1/2 inch cubes.
    Set aside.
