Tomatoes And Cauliflower - cooking recipe

Ingredients
    1 medium head cauliflower
    1/2 c. cooked tomatoes
    1 clove garlic
    3 Tbsp. oil
    1/2 tsp. salt
    2 Tbsp. grated Parmesan cheese
Preparation
    Remove outer leaves and stalks from fresh cauliflower; separate into flowerets.
    Cook in microwave until almost tender (approximately 8 minutes).
    In a 1 1/2-quart casserole dish, cook garlic and oil, uncovered, for about 2 minutes.
    Remove garlic and add hot, drained cauliflower to oil.
    Cook, uncovered, for about 4 minutes.
    Add salt and tomatoes.
    Cover and cook for about 6 minutes or until hot.
    Stir once during cooking.
    Just before serving, sprinkle with Parmesan cheese.
    Makes 4 servings.
