Ingredients

1/2 lb. dried beef
3 Tbsp. butter
1/4 c. flour
3/4 c. milk (more or less)
1/2 can tomatoes or 3 fresh
3 to 4 hard-boiled eggs, chopped
1/2 c. grated sharp cheese
Preparation

Brown beef in water; add flour until brown.
Add milk to make a thick gravy.
Add tomatoes.
Cook slowly until well blended. Add eggs and cheese.
Serve on biscuits or English muffins.
Makes wonderful brunch served with scrambled eggs and fried apples. Serves 8.
