German Pickled Mushrooms(Eingelegte Champignons) - cooking recipe

Ingredients
    1 lb. small button mushrooms
    1 Tbsp. salt
    1 medium onion, finely chopped
    1 clove garlic, crushed
    1/4 c. chopped fresh parsley
    2 bay leaves
    4 coarsely ground peppercorns or a few turns of your pepper mill
    1/2 tsp. crumbled dried thyme or chopped fresh thyme
    2 c. dry white wine
    2 c. cider vinegar
    1/2 c. olive oil
    juice of 1/2 lemon
Preparation
    Wash mushrooms thoroughly in cold water containing 1 tablespoon salt; drain.
    Mix all other ingredients; pour over the mushrooms in an enameled saucepan.
    Bring to a boil, then simmer for 6 to 8 minutes or until tender.
    Let cool.
    Keep covered in a refrigerator until required.
    This is one of my favorite first courses.
    Serves 6 to 8.
